Abstract
From a total of 192 cultivated rice varieties, the protein content in paddy and brown rice of 61 domestic and foreign varieties(Italy, USA, Russia, Korea, China, France and Bulgaria) was determined. The obtained results show that the protein content of the investigated varieties is very variable and ranges from 6.72-10.12% in paddy rice and from 6.31-10.29% in brown rice.
